Asian-European fusion restaurant, combining cuisines from California and the East. Chef Ando grills fine ingredients over binchotan charcoal to ensure his special New York cuts of aged beef are cooked to perfection. The name, from "hi" (fire) and "shio" (salt), indicates their approach in grilling their main entrees using the chef's personal blend of Nagasaki salt rubbed on rack of Lamb, free range chicken, duck breast and aged New York cut sirloin, live Maine lobster and more. Upstairs features an Oyster & Champagne Bar. Last order is at 11pm but late-night aperitifs continue until 3am
