Titaya's at 5501 N Lamar, recently opened between North Loop and Koening on the east side of Lamar, fills the bill. They cook food to order (listen to those woks clanging in the kitchen) - no steam table garbage. They aren't afraid to make it hot. They season with a subtle but sure hand, you can taste the kaffir lime leaves as they mingle with the lemongrass and cilantro. It's not too sweet for American palates, a common complaint for those unused to the sweetness of Bangkok street food. They serve Green Papaya salad, at once cool, refreshing and rocket-hot.
